There is probably a more official name for this and it’s certainly the basis to the letter rounds in the game show ‘Countdown’ (https://en.wikipedia.org/wiki/Countdown_(game_show)). However, whereas in Countdown players select cards at random from vowels and consonants, in this version players pick any long/longish word and from the letters that make up the word see
a) how many other words they can make
b) what’s the longest alternative word they can create.
